I love this soup! It’s so easy and delicious. In fact, it’s so easy that you don’t even have to follow a recipe; you can just make it up as you go along, like I do. The soup is versatile, so substitutions are okay. You can use chicken, ground beef, or italian sausage.
Start off by browning ground beef in your favorite skillet. Dice and add the vegetables and seasoning while the beef is browning, and continue to cook over low-medium heat until onion is translucent.
Meanwhile, in a large stock pot, add liquid and other ingredients. Bring to a simmer. Add meat and vegetables. Continue to simmer for about an hour or until carrots are soft.
In a separate pot, bring water (with a little salt) to a boil and add tortellini. Cook the tortellini for half the recommended time on the package, about 6 to 8 minutes. Drain. Add to the soup.
Stir the tortellini in. Remove from heat. Cover. Let stand for 20 to 30 minutes to cool and for tortellini to absorb some of the flavorful soup. Serve. Top with fresh grated parmesan cheese and sprinkle crushed red pepper flakes on top if you like it spicy.
Easy Tortellini Soup
A Momma T Concoction
1 lb. cooked meat (ground beef, sausage, or diced chicken)
2 14-1/2 oz cans or 1 carton of chicken broth
2 cups water
1 28-oz can fire-roasted crushed tomatoes
1 jar (about 24 oz.) of your favorite spaghetti sauce
1 15 oz can kidney beans (drained and rinsed)
1 medium onion
4 carrots (or more)
4 celery stalks (or more)
1 teaspoon or so of Italian seasoning (basil, oregeno, parsley blend)
1 tablespoon boullion (beef or chicken)
1 1 lb. package tortellini (dry)
Grated cheese, red pepper flakes
